Today would definitely be considered last minute, yes?
Well I have a really simple and really delicious gift idea for you if you’re scrambling. You could potentially have all the ingredients on hand too (if you’re big popcorn people).
1/2 cup unpopped popcorn kernels
1 cup butter
1 cup brown sugar
1/3 cup light corn syrup
2 tsp sea salt
Optional: peanuts or nut blend.
Preheat your oven to 300 degrees.
Start by popping your popcorn. We use a deep pot with coconut oil on medium heat. You heat up the oil and test it on two kernels. Once the two kernels have popped (carefully) dig them out of the oil with a spoon/fork and you know your oil is ready. Pour in the rest of your kernels and wait. Once the popping slows down to every 3-4 seconds you’re ready to remove it from the heat and pour into a separate bowl. It should make about 16 cups. Add the optional nuts to the popcorn at this time.
Combine your butter, brown sugar, corn syrup, and half of your salt in a pot and heat over medium heat. Once it’s melted and combined bring to a boil for 4 minutes. IMPORTANT: Once it’s boiling don’t stir it. Just let it boil.
After 4 minutes pour it over your popcorn and stir. It is HOT so use caution.
Line a baking sheet with parchment paper. Pour popcorn onto baking sheet and flatten it out. Sprinkle the rest of your salt on top.
Bake for 30 minutes at 300 degrees stirring every 10 minutes.
Let it cool on parchment paper on the counter. Steal a few tastes – because it’s amazing when it’s warm.
Once it’s cool you can wrap it up any way you’d like.
I just put it in a baggy and added a cute bow and label.

Our cake topper! Thanks to Momma Scheer for digging through the internet and finding this cute s’more couple on their wedding day. I fell in love with it right away and knew it had to be on top of our cake. I mean seriously, how precious are they?
Every Christmas since my mom has surprised us with a s’more ornament: a s’mornament.
^^We each got one in 2012. Mine was the santa and Mike’s was the golfer.^^

I’m hoping for a s’mornament in 2014 (hint hint Mom) so we can keep this tradition going. If it’s not s’mornaments I will make a point to buy some sort of ornament that has value to both of us and our family. An ornament a year for every year of marriage. We will have a very full tree.
